Home Made Chicken Goujons

Usually if I make my own home made chicken goujons or nuggets, I dip the chicken or chicken pieces into egg, then flour and/or breadcrumbs and fry it.

I came accross this recipe for home made chicken goujons the other week and tried it last night. It was really, really good!! Of course, I made my own variation of it, but it is definitely a keeper recipe!

Dipping the chicken in melted butter instead of egg made a big difference! This may not be the healthiest option, but only a little bit of butter will do, you don’t have to go too mad! I didnt have any cornflakes, so I whizzed up some toast in the mixer to make breadcrumbs, and it was very tasty.  I also add some herbs and spices – some sea salt, freshly ground black pepper, maybe some parsley, or some chilli flakes.  Cooking it in the oven instead of frying the goujons makes it a healthier option too.

You could use the same principle for bigger pieces of chicken or even whole chicken breasts.

The suggestion is also made to prepare the chicken strips ahead of time, and then to freeze them so they just need to be cooked. Good timesaving idea. Chop and coat the chicken pieces, put onto a baking sheet, and freeze for an hour or some. Then put portions of them into freezer bags, ready to defrost and pop into the oven.

You can also vary the coating – I have tried the home made goujons using some cheese biscuits instead of bread, and I have also added grated cheese or Parmesan cheese into the crumb mixture for a different flavour.
